When night falls, the humdrum daytime cafeteria morphs into a serious resto, its glass and steel elegance serving as backdrop to a menu that showcases molecular gastronomy. Here, for once, we're happy to meet – dare I say inhale? – foams and jellies. The chef's take on scallops is typical of his oeuvre: Seared scallops sit on barely candied yuzu fragments with fried nori shreds and tiny white lemon clouds. Wild halibut, meanwhile, is perfectly cooked fish with vermouth foam on top. This is complex, ambitious cooking. www.legourmand.com
